This is one of my favourite midweek meals. Its quick, easy and always a crowd pleaser with my bunch!

You can make this with most mince meats, I prefer to make this one with turkey mince. Turkey is lean and super tasty in a stir fry.
What I like about this meal is you can use whatever vegetables you have lying around (beans, Chinese broccoli, carrot, cabbage, baby corn, mushrooms etc).
Before you start, make sure you have all your prep ready to go. This is key to a stir fry, as you’ll move quickly.
What you’ll need;
The Sauce
1tsp corn flour (sub with tapioca flour)
2tbsp water
2tbsp light soy sauce ( sub with tamari)
2tsp dark soy
2.5 tbsp oyster sauce
2tbsp Chinese cooking wine
1 tsp coconut sugar (optional)
Filling
750g Turkey mince (can sub for chicken or pork)
3 large garlic cloves, minced
1 tsp ginger, minced
1 carrot julienned
8 mushrooms (Swiss brown or shiitake)
Half Chinese cabbage, chopped
10 green beans, chopped
1 can water chestnuts, finely diced
Serving
Spring onion, roughly chopped
Coriander, roughly chopped
Lettuce cups, washed and put in the fridge to crisp up
Sesame oil
Toasted sesame seeds
Method
Mix cornflour or tapioca with water in a jar. Then add the rest of your sauce ingredients
Heat a little oil in a wok (or pan) over medium high heat. Cook your meat first, once meat has been cooked add in your garlic & ginger.
Add in your vegetables and cook until softened (approx 3 minutes)
Top with sauce and allow the sauce to thicken approx 2 minutes.
Take off the heat and lastly fold in chopped water chestnuts, spring onion & coriander.
Top with a generous amount of sesame oil & sesame seeds.
Enjoy simply on its own or place into lettuce cups.
